If this money is not needed to purchase another home, where would this pay-out be best invested for a period of say 7 years?

It would depend on how long you think that you would not be in need of the money, I would go for a long term low risk investment if I had a house to sell for cash... Smile

Have you looked into Mutual Funds? If you have long term to leave your money to grow and won't get antsy if the market temporarily goes down, you may find it grows quite well over that 7 years.

Right now I'm considering putting part of the money from the sale of my home into annuities (to supplement my widow's benefits at 60) and the majority of the rest in a mutual fund.

I was just wondering if there might be some other investments I should consider.
